Our head chef, Martin Moritz, has consistently stopped buying sea fish for over 2 years. All our fish dishes consist of varieties fished from Lake Constance or other Swiss waters. Best of all, Trudy Schweizer, our almost 90-year-old fisherwoman, still goes fishing every day and brings the freshly caught fish to Lenzerheide once a week in a cool bag by bus and train.
